For you low-carbers out there
1 1/2 lbs lean hamburger
1 medium chopped sweet onion
6 slices crisp-cooked bacon, chopped in bits
4 eggs
1 cup mayonnaise
1 cup half-and-half
10 oz. shredded cheddar or Monterey Jack Cheese
1 tsp. garlic powder to taste
1 tsp. white pepper
Brown hamburger in skillet with onion. Remove
and mix in bowl with bacon, using a fork to break up large
lumps. Blend in Cuisinart until fine. Drain bacon and hamburger
grease into an empty can and set aside. Press mixture into
the bottom of a quiche baking dish.
Preheat oven to 350°F. While oven is heating,
whip remaining ingredients in food processor. Pour mixture
over beef bottom layer and bake 45 minutes until top is
solid and browned. Cool 15-20 minutes before slicing.
Makes 6-8 servings -- approximately 2.2 grams
of carbohydrate per serving.
